Ingredients
  

  • 2 cups finely crushed vanilla wafer crumbs
  • 5 tbsp unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • Pinch of fine sea salt
  • 2 1/2 cups whole milk
  • 4 large egg yolks
  • 2 tbsp unsalted butter, cold and cut into small pieces
  • 1 1/2 tsp vanilla extract
  • 3 to 4 medium ripe bananas
  • 1 cup cold heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • Extra crushed wafers and banana slices, for garnish

Method
 

  1. Combine vanilla wafer crumbs and melted butter in a bowl, then press firmly into a 9-inch pie plate. Chill 20 minutes.
  2. Whisk sugar, cornstarch, and salt in a saucepan. Whisk in milk, then egg yolks. Cook over medium heat, stirring constantly, until bubbling and thick, about 6 to 8 minutes. Remove from heat and stir in cold butter and vanilla. Let cool 5 minutes.
  3. Slice bananas and arrange in a single layer over the crust. Pour warm pudding over the bananas, smooth the top, and press plastic wrap directly onto the surface. Refrigerate until fully set, at least 4 hours.
  4. Whip heavy cream, powdered sugar, and vanilla to soft peaks. Spread over the chilled pie, garnish with extra wafer crumbs and banana slices, and serve cold.

Notes

The pie needs at least 4 hours to chill and set, so plan ahead. You can make it a day in advance and add the whipped cream right before serving. For the cleanest slices, wipe the knife between cuts.
