- Heat oven to 350°F (175°C) and line a 12 cup muffin tin with paper liners. In a large bowl, mash the bananas with a fork, then whisk in the yogurt, maple syrup, egg, melted butter, and vanilla.
- In a separate bowl, whisk together the flour, protein powder, baking powder, baking soda, salt, and chocolate chips if using, for about 30 seconds.
- Pour the wet mixture into the dry and fold with a spatula for about 12 to 15 strokes, just until the flour mostly disappears. A few lumps and streaks are okay.
- Divide the batter evenly among the muffin cups, filling each about three quarters full. Bake for 18 to 20 minutes, until a toothpick inserted in the center comes out with moist crumbs.
- Cool the muffins in the pan on a wire rack for 5 minutes, then transfer them out of the tin to the rack to cool completely, or serve warm.
Notes
If your protein powder is unsweetened, the muffins will taste lightly sweet from the banana and maple syrup. For a sweeter result, use a sweetened vanilla protein powder or add an extra tablespoon of maple syrup. The optional chocolate chips add little pops of richness that make these feel more like a bakery treat.
