- Preheat oven to 350°F (180°C) and line a baking sheet with parchment. In a medium bowl, mash bananas until smooth. Stir in vanilla, baking soda, and salt. Fold in oats and chocolate chips until no dry oats remain.
- Drop heaping tablespoonfuls of dough onto the sheet, spacing them 2 inches apart. Gently press each mound to about half an inch thick.
- Bake 10 to 12 minutes, until edges are golden and tops are set. Let cool on the sheet for 5 minutes, then transfer to a rack and serve warm or at room temperature.
Notes
These are best the day they are baked, but they stay soft for a few days. If your bananas are extra large, you may need a tablespoon more oats to get the right consistency. The dough can be mixed, covered, and chilled in the fridge for up to a day; let it sit at room temperature for 10 minutes before scooping.
