Banana Oatmeal Chocolate Chip Cookies Recipe

Ingredients
  

  • 2 large ripe bananas, mashed (about 1 cup)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt

Method
 

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment. In a medium bowl, mash bananas until smooth. Stir in vanilla, baking soda, and salt. Fold in oats and chocolate chips until no dry oats remain.
  2. Drop heaping tablespoonfuls of dough onto the sheet, spacing them 2 inches apart. Gently press each mound to about half an inch thick.
  3. Bake 10 to 12 minutes, until edges are golden and tops are set. Let cool on the sheet for 5 minutes, then transfer to a rack and serve warm or at room temperature.

Notes

These are best the day they are baked, but they stay soft for a few days. If your bananas are extra large, you may need a tablespoon more oats to get the right consistency. The dough can be mixed, covered, and chilled in the fridge for up to a day; let it sit at room temperature for 10 minutes before scooping.
