Banana Oatmeal Bread Recipe

Ingredients
  

  • 3 medium very ripe bananas, about 1 1/2 cups mashed
  • 1 cup old-fashioned rolled oats, divided
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 tsp ground cinnamon
  • 1/2 cup packed light brown sugar
  • 2 large eggs, at room temperature
  • 1/3 cup vegetable oil or melted unsalted butter
  • 1/4 cup plain Greek yogurt or buttermilk
  • 2 tsp vanilla extract

Method
 

  1. Heat oven to 350°F. Grease a 9x5 loaf pan and line with parchment. Mash bananas in a large bowl, then whisk in brown sugar, eggs, oil, yogurt, and vanilla.
  2. Grind 1/2 cup of the oats into a coarse flour using a food processor. In a bowl, whisk together the oat flour, remaining whole oats, all-purpose flour, baking soda, salt, and cinnamon.
  3. Add dry ingredients to the wet mixture and fold gently with a spatula just until no dry streaks remain.
  4. Pour batter into the pan, smooth the top, and bake 50–55 minutes until a toothpick comes out with moist crumbs. Cool 10 minutes in the pan, then lift out and cool completely on a rack before slicing.

Notes

If you only have whole wheat pastry flour, you can swap it in for the all-purpose flour with good results. The loaf slices cleanest when completely cool, but I won’t blame you for cutting a warm end slice.
