Banana Oat Cake Recipe

Ingredients
  

  • 2 cups (180 g) rolled oats
  • 3 very ripe medium bananas, plus 1 for topping (optional)
  • 2 large eggs
  • ¼ cup (60 ml) melted coconut oil or butter
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • Optional: ½ cup chocolate chips or walnuts

Method
 

  1. Blend the oats into a fine powder in a blender, about 30 seconds.
  2. Add the eggs, bananas, melted coconut oil, maple syrup, and vanilla. Blend until smooth, about 45 seconds.
  3. Add the baking powder, baking soda, salt, and cinnamon. Pulse just until mixed. Fold in any add-ins by hand.
  4. Pour the batter into a parchment-lined 8x4-inch loaf pan. Top with sliced banana if desired. Bake at 350°F (180°C) for 45 to 50 minutes, until a toothpick comes out clean.
  5. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and serve.

Notes

If using a square pan, start checking at 30 minutes. The cake can be made ahead and frozen, tightly wrapped, for up to 3 months. Let it cool fully before wrapping.
