Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 large overripe bananas
  • 1/2 cup packed light brown sugar
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup full-fat sour cream

Method
 

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin. Whisk flour, baking soda, and salt in a medium bowl.
  2. In a large bowl, mash bananas, then whisk in brown sugar, oil, egg, vanilla, and sour cream until smooth, about 30 seconds.
  3. Pour dry ingredients into wet and fold with a spatula for about 30 seconds, just until no dry flour remains.
  4. Divide batter among muffin cups, filling each three-quarters full. Bake 18 to 20 minutes until a toothpick comes out clean.
  5. Cool in pan 5 minutes, then transfer to a wire rack to cool completely before serving.

Notes

Use bananas that are heavily speckled or black for the sweetest, most intense banana flavour. These muffins freeze beautifully, just wrap each one individually and freeze for up to 3 months.
