- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan. In a large bowl, mash bananas, then whisk in yogurt, oil, eggs, sugar, and vanilla until uniform.
- Sprinkle flour, baking soda, and salt over the wet mixture. Fold gently with a spatula until no dry streaks remain; do not overmix.
- Pour batter into the pan and smooth the top. Bake 50 to 60 minutes, until a toothpick inserted in the center has only moist crumbs and the top is deeply golden.
- Cool in the pan 10 minutes, then transfer to a rack to cool completely. Slice thick and serve slightly warm or at room temperature.
Notes
If your bananas are not very sweet, an extra tablespoon of sugar can balance the flavor. The loaf firms up as it cools, so cutting it while still a little warm gives the cleanest slices. For the best texture, let it rest a few hours before storing.
