Banana French Toast Recipe

Ingredients
  

  • 2 very ripe bananas
  • 4 thick slices challah or brioche
  • 2 large eggs
  • ¼ cup whole milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • Pinch fine salt
  • 2 tbsp unsalted butter, divided
  • 1 tbsp light brown sugar
  • Maple syrup, for serving

Method
 

  1. In a shallow bowl, mash 1 banana until smooth. Whisk in the eggs, milk, vanilla, cinnamon, and salt.
  2. Melt 1 tbsp butter in a large nonstick skillet over medium heat. Dip one bread slice into the custard, soak 20 seconds per side, let excess drip off, and place in the skillet. Repeat with remaining slices.
  3. Cook 3 to 4 minutes per side until deep golden and crisp. Adjust heat if needed. Transfer to a plate and keep warm.
  4. Wipe the skillet, melt the remaining 1 tbsp butter with the brown sugar, stirring until dissolved. Slice the second banana into rounds and cook in a single layer for 2 minutes per side, until glazed.
  5. Stack French toast on plates, top with caramelized bananas, and drizzle generously with maple syrup. Serve immediately.

Notes

Use the ripest bananas you can find. If your bread is very fresh, let the slices sit out for an hour or toast them briefly before soaking. Leftovers keep in the fridge for up to 3 days.
