Ingredients

  • 3 very ripe bananas, mashed (about 1 cup)
  • 1 ¾ cups whole wheat flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ⅓ cup maple syrup
  • ⅓ cup olive oil or melted unsalted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup pitted and chopped Medjool dates

Method

  1. Preheat oven to 350°F (175°C). Grease an 8.5x4.5-inch loaf pan and line with parchment.
  2. In a large bowl, mash bananas. Whisk in eggs, maple syrup, oil, and vanilla.
  3. Add flour, baking soda, salt, cinnamon, and dates; fold gently until just combined.
  4. Pour batter into prepared pan, smooth top, and bake 50–55 minutes until a toothpick comes out clean.
  5. Cool in pan 10 minutes, then remove to a rack to cool completely before slicing.

Notes

For the cleanest slices, let the bread cool all the way to room temperature. If you can’t wait, just expect softer, slightly crumblier pieces.
