- Mash the banana in a medium bowl until smooth. Add the cottage cheese, eggs, and vanilla, and whisk until combined.
- In a small bowl, whisk together the flour, baking powder, cinnamon, and salt.
- Fold the dry ingredients into the wet mixture until just combined. Let the batter rest for 5 minutes.
- Heat a nonstick skillet over medium heat with a little butter. Ladle 2 tablespoons of batter per pancake into the pan. Cook for about 2 to 3 minutes per side, until golden and cooked through. Repeat with remaining batter, adding more butter as needed.
- Stack the pancakes on a warm plate, top with fresh banana slices and maple syrup, and serve immediately.
Notes
Letting the batter rest helps the pancakes rise better. If the batter seems too thick after resting, stir in a teaspoon of milk. The pancakes are best fresh but reheat well in the toaster.
