Banana Chocolate Chip Cake Recipe

Ingredients
  

  • 3 very ripe medium bananas, peeled
  • 1/2 cup (115 g) unsalted butter, melted and cooled slightly
  • 3/4 cup (150 g) packed light brown sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 3/4 cup (130 g) semi-sweet chocolate chips, plus a small handful for topping

Method
 

  1. Heat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment. Mash bananas in a large bowl.
  2. Whisk in melted butter, brown sugar, egg, and vanilla until smooth.
  3. Fold in flour, baking soda, and salt with a spatula just until no dry spots remain.
  4. Fold in chocolate chips, reserving a few for the top. Scrape batter into pan and smooth the surface, then scatter reserved chips on top.
  5. Bake 50 to 55 minutes until a toothpick inserted in the center comes out with moist crumbs. Cool in the pan 10 minutes, then lift out onto a rack.
  6. Cool at least 20 minutes before slicing with a serrated knife. Slice and serve warm or at room temperature.

Notes

If the bananas are on the small side, use 4 instead of 3 to get a full 1 1/2 cups mashed. The cake slices most cleanly when it’s completely cool, but the first warm slice right after the 20-minute rest is hard to resist.
