Ingredients
  

  • 1/2 cup unsalted butter, melted and cooled slightly
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs, at room temperature
  • 1 cup mashed very ripe banana (about 2 large bananas)
  • 1/2 cup full-fat sour cream
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter
  • 3 1/2 cups powdered sugar
  • 2 to 3 tbsp heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. Brown the 1 cup butter in a saucepan over medium heat until golden and nutty, about 5 to 7 minutes. Pour into a bowl and cool until solid but soft.
  2. Preheat oven to 350°F (175°C). Grease a 9x13-inch pan. Whisk flour, baking soda, and salt. In a large bowl, whisk melted butter, sugars, eggs, banana, sour cream, and vanilla. Stir in dry ingredients until just combined.
  3. Pour batter into pan, spread even, and bake 28 to 32 minutes until a toothpick comes out clean. Cool completely.
  4. Beat the cooled brown butter until creamy. Sift in powdered sugar, then add vanilla, salt, and 2 tbsp cream. Whip until fluffy, adding more cream if needed.
  5. Spread frosting over the cooled cake, slice, and serve.

Notes

Allow the brown butter to cool and solidify for about 1 hour before making the frosting, or chill and stir to hurry it along. The cake gets even better after a night in the fridge.
