- Brown the 1 cup butter in a saucepan over medium heat until golden and nutty, about 5 to 7 minutes. Pour into a bowl and cool until solid but soft.
- Preheat oven to 350°F (175°C). Grease a 9x13-inch pan. Whisk flour, baking soda, and salt. In a large bowl, whisk melted butter, sugars, eggs, banana, sour cream, and vanilla. Stir in dry ingredients until just combined.
- Pour batter into pan, spread even, and bake 28 to 32 minutes until a toothpick comes out clean. Cool completely.
- Beat the cooled brown butter until creamy. Sift in powdered sugar, then add vanilla, salt, and 2 tbsp cream. Whip until fluffy, adding more cream if needed.
- Spread frosting over the cooled cake, slice, and serve.
Notes
Allow the brown butter to cool and solidify for about 1 hour before making the frosting, or chill and stir to hurry it along. The cake gets even better after a night in the fridge.
