Ingredients

  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (113 g) unsalted butter
  • 2 large ripe bananas (about 1 cup mashed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup (90 g) all-purpose flour
  • 1/2 cup (50 g) unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/2 cup (85 g) semisweet chocolate chips

Method

  1. Preheat the oven to 350°F (175°C) and line an 8-inch square pan with parchment.
  2. Mash the bananas in a large bowl. Melt the butter and stir it into the bananas.
  3. Whisk in the sugar, egg, and vanilla until glossy.
  4. Fold in the flour, cocoa, baking soda, and salt until just combined. Stir in most of the chocolate chips, reserving a few for the top.
  5. Spread the batter in the pan, scatter the remaining chips on top, and bake 22–25 minutes until a toothpick comes out with moist crumbs.
  6. Cool completely in the pan, then lift out and slice.

Notes

The brownies taste best after they’ve cooled fully, but a warm square still tastes incredible. If you need them faster, set the pan on a wire rack and point a fan at it to speed the cooling.
