Banana Bread French Toast Recipe

Ingredients
  

  • 4 thick slices banana bread, preferably stale
  • 2 large eggs
  • ¼ cup whole milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • Pinch fine sea salt
  • 2 tbsp unsalted butter, divided
  • Maple syrup, fresh banana slices, and powdered sugar, for serving

Method
 

  1. In a shallow bowl, whisk the eggs, milk, vanilla, cinnamon, and salt until smooth with no streaks of egg white.
  2. Dip each banana bread slice into the custard for 15 to 20 seconds per side, then place on a plate.
  3. Melt 1 tbsp butter in a large nonstick skillet over medium heat. Cook two slices for 3 to 4 minutes per side until deep golden brown and the custard is set. Repeat with the remaining butter and slices.
  4. Transfer to plates, dust with powdered sugar if using, and serve immediately with maple syrup and fresh banana slices.

Notes

This recipe works best with day-old banana bread that has had a chance to dry slightly. If your banana bread is very soft, slice it 1.5 inches thick and shorten the soak to 10 seconds per side.
