- In a shallow bowl, whisk the eggs, milk, vanilla, cinnamon, and salt until smooth with no streaks of egg white.
- Dip each banana bread slice into the custard for 15 to 20 seconds per side, then place on a plate.
- Melt 1 tbsp butter in a large nonstick skillet over medium heat. Cook two slices for 3 to 4 minutes per side until deep golden brown and the custard is set. Repeat with the remaining butter and slices.
- Transfer to plates, dust with powdered sugar if using, and serve immediately with maple syrup and fresh banana slices.
Notes
This recipe works best with day-old banana bread that has had a chance to dry slightly. If your banana bread is very soft, slice it 1.5 inches thick and shorten the soak to 10 seconds per side.
