Ingredients
  

  • Banana bread base
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 3 medium ripe bananas, mashed (about 1 1/4 cups)
  • 1 tsp vanilla extract
  • Cheesecake layer
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • Pinch of salt
  • Topping
  • 1 to 2 ripe bananas, sliced thin
  • Powdered sugar or cinnamon, for dusting

Method
 

  1. Preheat oven to 350°F. Whisk flour, baking soda, and salt in a bowl. In a large bowl, whisk melted butter and brown sugar, then add eggs, mashed bananas, and vanilla. Fold wet into dry until just combined.
  2. Butter a 9-inch springform pan. Spread banana bread batter evenly; bake for 15 minutes until just set. Remove and reduce oven to 325°F.
  3. Beat cream cheese until smooth. Add granulated sugar, then eggs one at a time, mixing on low. Blend in sour cream, vanilla, and salt.
  4. Pour cheesecake batter over the partially baked base. Bake at 325°F for 45-55 minutes, until edges are set and center jiggles. Turn off oven, crack door, and leave inside for 1 hour. Run a knife around edge, cool completely, then refrigerate at least 4 hours.
  5. Remove from pan, top with banana slices, and dust with powdered sugar. Slice and serve cold.

Notes

Cooling and chilling time is not included in the prep or cook times; plan for about 5 hours of hands-off time before serving. Add the banana topping just before slicing so it stays fresh-looking.
