Banana Bread Brownies Recipe

Ingredients
  

  • 1/2 cup (113 g) unsalted butter, melted
  • 1 cup (200 g) packed light brown sugar
  • 1 large egg
  • 2 very ripe bananas, mashed (about 1 cup)
  • 1 tsp vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1/3 cup (30 g) unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1 cup (170 g) semisweet chocolate chips, plus extra for topping

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch metal pan with parchment.
  2. Whisk melted butter and brown sugar for 1 minute until glossy. Add egg, mashed bananas, and vanilla; whisk until smooth.
  3. Sift flour, cocoa, baking soda, and salt over the bowl. Fold gently until no dry streaks remain, about 30 seconds.
  4. Fold in 1 cup chocolate chips, then spread batter into the pan. Top with extra chips.
  5. Bake 30 to 33 minutes until a toothpick comes out with moist crumbs. Cool completely in the pan, then lift out and slice into 9 squares.

Notes

For the shiniest top, make sure the butter is still hot when you whisk it with the sugar. If your bananas are extra large, reduce the flour by a couple of tablespoons to keep the batter from getting too stiff. These brownies need to cool fully before slicing, or the center will be too soft to hold a clean edge.
