Ingredients
Method
- Preheat oven to 350°F (175°C) and line an 8x8-inch metal pan with parchment.
- Whisk melted butter and brown sugar for 1 minute until glossy. Add egg, mashed bananas, and vanilla; whisk until smooth.
- Sift flour, cocoa, baking soda, and salt over the bowl. Fold gently until no dry streaks remain, about 30 seconds.
- Fold in 1 cup chocolate chips, then spread batter into the pan. Top with extra chips.
- Bake 30 to 33 minutes until a toothpick comes out with moist crumbs. Cool completely in the pan, then lift out and slice into 9 squares.
Notes
For the shiniest top, make sure the butter is still hot when you whisk it with the sugar. If your bananas are extra large, reduce the flour by a couple of tablespoons to keep the batter from getting too stiff. These brownies need to cool fully before slicing, or the center will be too soft to hold a clean edge.
