Banana Blueberry Pancakes Recipe

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 2 very ripe bananas, mashed
  • 1 large egg
  • 3/4 cup whole milk
  • 2 tbsp unsalted butter, melted, plus more for the skillet
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Method
 

  1. Whisk the flour, baking powder, baking soda, and salt in a large bowl. Preheat a large nonstick skillet over medium heat.
  2. Mash the bananas in a medium bowl, then whisk in the egg, milk, melted butter, and vanilla.
  3. Pour the wet mixture over the dry and stir just until combined, then gently fold in the blueberries.
  4. Lightly butter the skillet. Pour 1/4 cup batter per pancake, cook 2 to 3 minutes until edges set and bubbles pop on top, flip, and cook 1 to 2 minutes more. Serve stacked with butter and maple syrup.

Notes

If using frozen blueberries, do not thaw them or the batter will turn purple. Toss the berries in a little flour before folding them in to help prevent sinking. These pancakes are naturally sweet from the banana, but a drizzle of good maple syrup never hurts.
