- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Mash the 2 bananas in a bowl, then stir in the 1/4 cup peanut butter and 1 teaspoon vanilla until smooth.
- Fold in the 1 cup oats, 1/2 teaspoon cinnamon, and 1/8 teaspoon salt until evenly mixed.
- Gently fold in the 1/2 cup blueberries, then scoop tablespoons of dough onto the baking sheet. Flatten slightly and bake for 12 to 14 minutes, until edges are lightly golden.
- Let cookies rest on the sheet for 5 minutes, then transfer to a wire rack to cool. Serve warm or at room temperature.
Notes
If your dough feels too wet to scoop, let it sit for 5 minutes so the oats can absorb some moisture. The cookies firm up as they cool, so do not overbake them looking for a hard top. Frozen blueberries work fine here, no need to thaw them.
