Ingredients
  

  • 2 large ripe bananas (about 1 cup mashed)
  • 1 cup rolled oats
  • 1/2 cup fresh blueberries
  • 1/4 cup natural peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon fine sea salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Mash the 2 bananas in a bowl, then stir in the 1/4 cup peanut butter and 1 teaspoon vanilla until smooth.
  2. Fold in the 1 cup oats, 1/2 teaspoon cinnamon, and 1/8 teaspoon salt until evenly mixed.
  3. Gently fold in the 1/2 cup blueberries, then scoop tablespoons of dough onto the baking sheet. Flatten slightly and bake for 12 to 14 minutes, until edges are lightly golden.
  4. Let cookies rest on the sheet for 5 minutes, then transfer to a wire rack to cool. Serve warm or at room temperature.

Notes

If your dough feels too wet to scoop, let it sit for 5 minutes so the oats can absorb some moisture. The cookies firm up as they cool, so do not overbake them looking for a hard top. Frozen blueberries work fine here, no need to thaw them.
