Balsamic Pasta Salad Recipe

Ingredients
  

  • 1 lb short pasta (rotini or penne)
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella pearls
  • 1/4 cup thinly sliced red onion
  • 1/2 cup fresh basil leaves, torn
  • 1/3 cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper

Method
 

  1. Cook the pasta in salted boiling water until al dente, about 8 minutes. Drain and rinse under cold water until cool.
  2. Whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, garlic, salt, and pepper until smooth.
  3. In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and red onion. Pour the dressing over and toss to coat.
  4. Just before serving, fold in the basil, taste, and add more salt or pepper if needed. Serve cold or at room temperature.

Notes

If making ahead, hold the basil and toss it in right before serving. The salad will keep for several days in the fridge, but it will absorb the dressing, so stir well and refresh with a little olive oil and vinegar if it looks dry.
