Method
- In a medium bowl, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, garlic, salt, and pepper until emulsified.
- Place the chicken in a zip-top bag or shallow dish. Pour the marinade over, seal, and turn to coat evenly. Marinate in the refrigerator for at least 30 minutes, up to 8 hours.
- Preheat a grill to medium-high (about 400°F). Remove the chicken from the marinade, letting excess drip off, and discard the used marinade. Pat the chicken dry with paper towels. Grill the chicken for 5 to 7 minutes per side, until the internal temperature reaches 165°F.
- Transfer the chicken to a plate, tent loosely with foil, and rest for 5 minutes. Slice against the grain and serve warm.
Notes
This marinade is enough for up to 2 pounds of chicken. If you have time, marinate for 4 hours for the deepest flavor. The resting step is important; skipping it will make the chicken less juicy. If you prefer to bake, see the FAQ above.
