Baking Soda Biscuits Recipe

Ingredients
  

  • 2 cups all-purpose flour, plus more for dusting
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1 tbsp granulated sugar (optional)
  • 6 tbsp cold unsalted butter, cut into small cubes
  • 1 cup cold buttermilk

Method
 

  1. Preheat oven to 425°F (220°C). Whisk flour, baking soda, salt, and sugar in a large bowl.
  2. Cut in butter until mixture looks like coarse meal with pea-sized pieces.
  3. Add buttermilk and stir with a fork just until a shaggy dough forms.
  4. Turn dough onto floured surface, pat to 3/4 inch, fold once, pat again, and cut with a 2 1/2-inch biscuit cutter.
  5. Bake close together on a lined sheet for 12 to 15 minutes until golden. Brush with melted butter if desired and serve hot.

Notes

If you want to make the dough ahead, refrigerate it after cutting and before baking for up to 2 hours. Cold dough rises better, so this actually improves the biscuits. If the tops aren't browning after 12 minutes, give them another minute or two, but don't overbake.
