Method
- Whisk melted butter, brown sugar, and granulated sugar in a large bowl until combined. Whisk in egg, egg yolk, vanilla, and peanut butter until smooth.
- Fold in flour, baking powder, baking soda, and salt just until no dry streaks remain.
- Scoop heaping tablespoonfuls of dough, roll into balls, and place on parchment-lined sheets. Press each with a sugared fork to form a crosshatch, flattening to 1/2 inch.
- Bake at 350°F (175°C) for 10 to 12 minutes, until edges are set and golden. Cool on the sheet 5 minutes, then transfer to a rack.
Notes
The cook time covers one tray. If you bake two trays back to back, the second tray may need an extra minute. For thicker, chewier cookies, chill the shaped dough for 30 minutes before baking.
