Ingredients

  • 12 jumbo shrimp (U8 or larger), peeled and deveined, tails on
  • 8 oz lump or backfin crab meat
  • 4 tbsp unsalted butter, melted
  • 1/2 cup panko breadcrumbs
  • 1 small shallot, minced
  • 2 garlic cloves, minced
  • 1 lemon, zested (plus lemon wedges for serving)
  • 2 tbsp chopped fresh parsley, divided
  • 1 tsp Old Bay seasoning
  • Salt and freshly ground black pepper

Method

  1. Preheat oven to 375°F (190°C). Sauté shallot and garlic in 2 tbsp melted butter until soft, about 2 minutes, then cool slightly. Gently mix crab, panko, remaining butter, the cooled shallot mixture, lemon zest, 1 tbsp parsley, Old Bay, salt, and pepper.
  2. Butterfly shrimp by cutting a deep slit along the back, leaving the tail intact, then press open and lay cut‑side up on a lined baking sheet.
  3. Spoon about 2 tbsp crab filling onto each shrimp, pressing it gently into a mound.
  4. Bake 15–18 minutes until stuffing is golden and shrimp are pink and opaque. Transfer to plates, spoon pan juices over, sprinkle with remaining parsley, and serve with lemon wedges.

Notes

Use the biggest shrimp you can find for the best ratio of stuffing to shrimp. If your shrimp are smaller than jumbo, reduce the bake time by a couple of minutes. Leftover stuffing is great baked in a small dish and eaten with crackers.
