Baked Parmesan Crusted Chicken Recipe

Ingredients
  

  • 4 boneless skinless chicken breasts (about 1 1/2 lbs)
  • 1 tsp kosher salt, divided
  • 1/2 tsp black pepper, divided
  • 1 large egg
  • 1 tbsp water
  • 3/4 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning
  • 2 tbsp melted unsalted butter or olive oil
  • Cooking spray

Method
 

  1. Pound chicken to 1/2-inch thickness between plastic wrap. Season both sides with half the salt and pepper.
  2. Preheat oven to 400°F (200°C). Set a wire rack on a baking sheet and spray with cooking spray.
  3. Whisk egg and water in a shallow bowl. In a second bowl, mix panko, Parmesan, garlic powder, Italian seasoning, and the remaining salt and pepper.
  4. Dip each breast in egg wash, then press into the panko mixture to coat. Place on the rack and drizzle with melted butter.
  5. Bake for 25 to 30 minutes until golden and the thickest part registers 165°F. Rest on the rack for 5 minutes, then slice and serve.

Notes

If your chicken breasts are uneven after pounding, tuck the thin tail underneath to create a more uniform shape. The internal temperature will climb a few degrees as the chicken rests, so pulling it at 162°F keeps it extra juicy.
