- Pound chicken to 1/2-inch thickness between plastic wrap. Season both sides with half the salt and pepper.
- Preheat oven to 400°F (200°C). Set a wire rack on a baking sheet and spray with cooking spray.
- Whisk egg and water in a shallow bowl. In a second bowl, mix panko, Parmesan, garlic powder, Italian seasoning, and the remaining salt and pepper.
- Dip each breast in egg wash, then press into the panko mixture to coat. Place on the rack and drizzle with melted butter.
- Bake for 25 to 30 minutes until golden and the thickest part registers 165°F. Rest on the rack for 5 minutes, then slice and serve.
Notes
If your chicken breasts are uneven after pounding, tuck the thin tail underneath to create a more uniform shape. The internal temperature will climb a few degrees as the chicken rests, so pulling it at 162°F keeps it extra juicy.
