- Season chicken breasts with salt and pepper. Preheat oven to 400°F (200°C) and set a wire rack inside a rimmed baking sheet. Spray the rack lightly.
- Set up three bowls: flour in one, beaten eggs in the second, and panko, Parmesan, garlic powder, onion powder, and paprika mixed in the third. Coat each breast in flour, then egg, then press firmly into the panko mixture. Place on the rack.
- Spray the tops of the chicken generously with cooking spray so the panko looks damp.
- Bake for 20 to 25 minutes until the crust is deep golden and the thickest part reads 165°F (74°C).
- Rest the chicken on the rack for 5 minutes, then slice on an angle and serve with lemon wedges.
Notes
If you do not have a wire rack, bake the chicken directly on a greased sheet pan, but expect the bottom to be softer. A small pinch of cayenne in the panko mix adds a warm back note without real heat.
