- Preheat oven to 400°F (200°C) and line a baking sheet with parchment. In a bowl, mix the mayo, Parmesan, garlic, Italian seasoning, salt, and pepper until smooth.
- Pat chicken dry and place on the sheet. Spread the mayo mixture evenly over the top of each breast. In a separate bowl, toss the panko with melted butter and sprinkle over the coated chicken, pressing lightly to adhere.
- Bake on the middle rack for 20 to 25 minutes, until the panko is golden and the chicken reaches 165°F (74°C) at its thickest part.
- Let the chicken rest 5 minutes, then slice against the grain and serve with fresh parsley if desired.
Notes
The chicken needs that 5-minute rest after baking to keep the juices locked in; don’t slice it right away. If your breasts are uneven in thickness, pound the thick ends gently with a meat mallet so they cook at the same rate as the thinner parts.
