Ingredients

  • 2 pints cherry tomatoes
  • 1 (7 to 8 oz) block feta cheese
  • 3 cloves garlic, smashed
  • ¼ cup olive oil
  • ½ tsp red pepper flakes
  • Salt and black pepper
  • 8 oz dried pasta (rigatoni, penne, or fusilli)
  • Handful fresh basil leaves

Method

  1. Preheat oven to 400°F (200°C). Place cherry tomatoes, garlic, olive oil, red pepper flakes, salt, and pepper in a baking dish. Toss, then nestle the block of feta in the center. Roast 30 minutes until tomatoes burst and feta softens.
  2. Meanwhile, cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
  3. Remove dish from oven. Discard garlic or mash it in. Mash feta and tomatoes together, adding ¼ cup pasta water, until a creamy sauce forms.
  4. Add drained pasta to the dish, toss with sauce, adding more pasta water as needed. Tear basil over the top and serve hot.

Notes

If your feta block is on the smaller side (under 7 oz), the sauce will be less rich but still delicious. Add an extra splash of olive oil or a small knob of butter at the end if it tastes thin.
