- Crush crackers in a zip-top bag with a rolling pin until fine crumbs with a few small pieces remain. Mix with parmesan, garlic powder, paprika, salt, and pepper in a shallow bowl.
- Pound chicken breasts between plastic wrap to ½ inch thick. Season lightly with salt.
- Whisk eggs and milk in a second shallow bowl. Dip each breast in egg, let excess drip, then press firmly into cracker mixture on both sides.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment. Arrange chicken on sheet, spritz with oil. Bake 18 to 20 minutes until crust is deep gold and internal temp reaches 160°F (71°C).
- Let rest 3 minutes, slice diagonally, and serve hot.
Notes
If your chicken breasts are large, you can slice them in half horizontally instead of pounding. The key is ending up with pieces that are all roughly ½ inch thick so they finish at the same time. Let them cool slightly before slicing to keep the coating intact.
