Baked Cottage Cheese Donuts Recipe

Ingredients
  

  • 1 cup full-fat cottage cheese
  • 1 large egg
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1 tsp baking powder
  • Pinch of salt
  • 2 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Method
 

  1. Preheat oven to 400°F (200°C) and grease a 6-cavity donut pan. Blend cottage cheese, egg, maple syrup, and vanilla until completely smooth.
  2. Add oat flour, baking powder, and salt to the blender. Pulse until a thick batter forms, scraping down the sides once. Do not overmix.
  3. Spoon the batter into the donut pan, filling each cavity three-quarters full. Smooth the tops.
  4. Bake for 12 to 14 minutes, until puffed and springy to the touch. Cool in the pan for 2 minutes, then turn out onto a rack. Brush warm donuts with melted butter and roll in a mix of sugar and cinnamon. Serve right away.

Notes

These donuts are best the day they are baked. If making ahead, store unfrosted and coat with butter and cinnamon sugar just before serving for the crispest coating.
