- Shred 2 cups cooked chicken into short, even strands.
- In a large bowl, mix the cream cheese, salsa, shredded cheese, cumin, chili powder, garlic powder, and salt until smooth, then fold in the chicken.
- Warm the tortillas, spoon 2 tbsp filling onto each, roll tightly, and place seam-side down on a parchment-lined baking sheet.
- Brush the taquitos with the oil, bake at 425°F for 12 to 15 minutes until golden, then serve hot with salsa, sour cream, and guacamole.
Notes
Leftover taquitos re-crisp beautifully in the oven or air fryer, but the microwave makes them chewy. If you want to prep them ahead, assemble on the tray and refrigerate up to 8 hours, then bake as directed.
