Ingredients
  

  • 4 chicken leg quarters, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Pinch of cayenne (optional)

Method
 

  1. Pat the chicken dry. Rub with olive oil, then coat evenly with the salt, paprika, garlic powder, onion powder, pepper, and cayenne. Let sit at room temperature 10 minutes.
  2. Preheat oven to 425°F (220°C). Arrange chicken skin-side up on a foil-lined baking sheet, leaving space between pieces. Use a wire rack if you have one.
  3. Roast 40 to 45 minutes, until skin is deep golden and a thermometer reads 175°F to 180°F in the thickest part of a thigh. Tent with foil and rest 10 minutes on the pan.
  4. Transfer to a platter, spoon pan juices over the top, and serve with lemon wedges.

Notes

Letting the chicken rest is important; it keeps the juices from running out when you cut into it. If your quarters are on the large side, they may need a few extra minutes, but the temperature guide in step 3 will keep you on track.
