Baked Chicken Meatballs Recipe

Ingredients
  

  • 1 lb ground chicken
  • 1/4 cup finely grated yellow onion
  • 1/4 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 clove garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment. In a large bowl, combine all ingredients and mix gently just until incorporated.
  2. Shape the mixture into 16 to 18 meatballs using damp hands and place them on the baking sheet an inch apart.
  3. Bake on the middle rack for 18 to 20 minutes, until the meatballs reach an internal temperature of 165°F and are lightly golden on top.
  4. Let the meatballs rest for 2 minutes, then serve hot with sauce, pasta, or in rolls, finished with extra Parmesan and basil.

Notes

If you use very lean ground chicken breast, add 1 tablespoon of olive oil to the mix for extra moisture. The uncooked meatball mixture can be covered and refrigerated overnight, then shaped and baked directly from the fridge, adding a minute or two to the cook time.
