Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment. In a large bowl, combine all ingredients and mix gently just until incorporated.
- Shape the mixture into 16 to 18 meatballs using damp hands and place them on the baking sheet an inch apart.
- Bake on the middle rack for 18 to 20 minutes, until the meatballs reach an internal temperature of 165°F and are lightly golden on top.
- Let the meatballs rest for 2 minutes, then serve hot with sauce, pasta, or in rolls, finished with extra Parmesan and basil.
Notes
If you use very lean ground chicken breast, add 1 tablespoon of olive oil to the mix for extra moisture. The uncooked meatball mixture can be covered and refrigerated overnight, then shaped and baked directly from the fridge, adding a minute or two to the cook time.
