Ingredients
  

  • 3 cups cooked chicken, shredded or diced
  • 1 box (6 oz) savory herb stuffing mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped onion
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon poultry seasoning (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish. In a large bowl, whisk together the cream of chicken soup, sour cream, milk, salt, pepper, and poultry seasoning. Stir in the chicken, celery, and onion until fully coated.
  2. In a separate bowl, toss the dry stuffing mix with the melted butter until all the crumbs are evenly moistened.
  3. Spread the chicken mixture evenly in the prepared dish, then scatter the buttered stuffing over the top in a light, even layer without pressing it down.
  4. Bake for 30 to 35 minutes, until the casserole is bubbly at the edges and the stuffing is deep golden brown. Let it rest for 5 minutes, then scoop and serve.

Notes

If your stuffing mix includes a separate seasoning packet, stir that into the butter before tossing with the crumbs for even more flavor. This casserole holds well under a loose foil tent on the stovetop for up to 20 minutes if you are waiting for everyone to sit down.
