Baked Cabbage Steaks Recipe

Ingredients
  

  • 1 small green cabbage (about 2 to 2.5 lb)
  • 4 tbsp unsalted butter, melted
  • 2 garlic cloves, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • 3 tbsp grated Parmesan cheese

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment. Slice the cabbage crosswise into 3/4-inch-thick rounds, keeping the core intact.
  2. Mix the melted butter, garlic, salt, pepper, and smoked paprika. Arrange steaks in a single layer and brush both sides generously.
  3. Roast for 20 minutes. Flip the steaks, sprinkle with Parmesan, and roast another 10 to 12 minutes until golden and fork-tender.
  4. Transfer the steaks to a platter, top with extra cheese and herbs if desired, and serve hot.

Notes

The outer leaves of the cabbage may darken more than the rest, and that’s the point — they turn into the crispiest bites. Use a thin, flexible spatula for flipping to keep the steaks whole.
