Ingredients
Method
- Whisk together the ketchup, brown sugar, vinegar, Worcestershire, smoked paprika, garlic powder, onion powder, salt, and pepper until smooth. Reserve half the sauce.
- Pat chicken dry, season lightly with salt and pepper, then coat with the other half of the sauce. Arrange skin side up in a rimmed dish.
- Preheat oven to 400°F (200°C). Roast chicken for 35 to 40 minutes, until internal temp reaches 155°F to 160°F (68°C to 71°C) for dark meat.
- Brush reserved sauce over the chicken and broil on high for 3 to 5 minutes, watching closely, until the glaze bubbles and darkens in spots. Rest 5 minutes, then plate and spoon pan juices over the top.
Notes
Let the chicken rest a few minutes before serving so the juices settle and the skin stays crisp. If you want the sauce extra thick and glossy, simmer it in a small pan on the stovetop for 5 minutes before using, then brush it on in the final step.
