Baja Fish Tacos Recipe

Ingredients
  

  • 1 lb firm white fish fillets (cod, halibut, or tilapia)
  • 1/2 cup Mexican crema or sour cream
  • 2 limes
  • 2 cups finely shredded green cabbage
  • 1/4 cup finely chopped cilantro
  • 1/2 jalapeño, optional
  • Vegetable oil for frying
  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 2/3 cup cold light beer
  • 8 small corn tortillas

Method
 

  1. Mix crema with juice of 1 lime and salt. Toss cabbage with cilantro, jalapeño, and half the crema to make the slaw.
  2. Whisk flour, cornstarch, baking powder, and salt. Slowly add cold beer, whisk until just combined.
  3. Cut fish into 2-inch strips, pat dry, and season with salt.
  4. Heat oil to 350°F. Coat fish in batter, fry in batches 3 to 4 minutes until golden and cooked through.
  5. Char tortillas in a dry skillet. Fill with fish, slaw, reserved crema, and a squeeze of lime.

Notes

Fry in small batches so the oil stays hot, and let it come back to temperature between each. If you prefer a milder crema, skip the jalapeño in the slaw and drizzle a little hot sauce on top instead.
