Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 2 large eggs
  • 1 cup (240ml) buttermilk
  • ½ cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • ½ cup rainbow sprinkles (jimmies)
  • ½ cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 2-3 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • Pink gel food coloring
  • Extra sprinkles for topping

Method

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch pan. Whisk flour, sugar, baking powder, baking soda, and salt. Add eggs, buttermilk, oil, and vanilla, stirring until smooth.
  2. Fold in ½ cup sprinkles with a spatula, just until evenly distributed.
  3. Pour batter into pan, smooth the top, and bake 25-30 minutes until a toothpick comes out clean. Cool completely in the pan on a rack.
  4. Beat butter until creamy, then sift in powdered sugar. Add 2 tbsp cream, vanilla, and a drop of pink gel color. Whip on high for 2 minutes, adding more cream if needed.
  5. Spread frosting over the cooled cake and scatter extra sprinkles on top. Slice and serve.

Notes

The cake must be fully cooled before you frost it or the buttercream will melt. If the batter looks a little lumpy because of cold eggs, don’t worry, it bakes out smooth. For the boldest pink, stick with gel coloring; liquid drops struggle to give that vivid color without making the frosting runny.
