Method
- Preheat oven to 400°F (200°C). Slice dates lengthwise partway open, stuff each with 1 tsp goat cheese, and press closed.
- Wrap each date with a half slice of bacon and secure with a toothpick. Arrange seam side down on a parchment-lined baking sheet.
- Bake for 18 to 20 minutes, flipping halfway, until bacon is deep golden and crisp.
- Transfer to a plate, drizzle with honey, and serve warm.
Notes
If your dates are on the smaller side, use slightly less goat cheese so the filling doesn't push out during baking. These are best right out of the oven, but you can hold them in a warm oven (200°F) for up to 20 minutes if you need to serve in batches.
