- Preheat oven to 400°F (200°C) and line a baking sheet with foil. Mix the cream cheese, cheddar, garlic powder, and smoked paprika until combined.
- Halve and seed the jalapenos. Fill each half with the cheese mixture, leveling it off.
- Cut bacon slices in half crosswise. Wrap one half-slice around each stuffed pepper, tucking ends underneath.
- Bake 22 to 25 minutes until bacon is crisp and peppers are softened.
- Cool 2 to 3 minutes, then serve warm with ranch or sour cream.
Notes
If you assemble them ahead and chill, add 2 to 3 minutes to the bake time. For the crispiest bacon on the bottom, use a wire rack set on the baking sheet. Wear gloves when handling jalapenos, and wash your hands right after.
