Bacon Wrapped Chicken Breast Recipe

Ingredients
  

  • 4 boneless skinless chicken breasts (about 6 oz each)
  • 8 to 12 slices thin-cut bacon
  • ¼ cup packed light brown sugar
  • 2 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • ½ tsp black pepper

Method
 

  1. Preheat oven to 400°F and set a wire rack on a foil-lined baking sheet. Pound the chicken to ¾-inch thickness, then season with garlic powder, salt, and pepper.
  2. Wrap each breast snugly in 2 to 3 slices of bacon, overlapping the slices, and place seam side down on the rack.
  3. Stir the brown sugar and Dijon mustard together and brush two-thirds of the glaze over the tops and sides.
  4. Bake for 15 minutes, brush on the remaining glaze, and continue baking 10 to 15 minutes more, until the internal temperature reaches 165°F and the bacon is crisp.
  5. Rest the chicken for 5 minutes, slice, and spoon any pan drippings over the top before serving.

Notes

If your chicken breasts are larger than 6 ounces, add a few extra minutes to the bake time and still rely on the thermometer rather than the clock. Thin bacon is key here; thick-cut will need a quick sear before wrapping or it won't get fully crisp in time.
