- Preheat oven to 400°F and set a wire rack on a foil-lined baking sheet. Pound the chicken to ¾-inch thickness, then season with garlic powder, salt, and pepper.
- Wrap each breast snugly in 2 to 3 slices of bacon, overlapping the slices, and place seam side down on the rack.
- Stir the brown sugar and Dijon mustard together and brush two-thirds of the glaze over the tops and sides.
- Bake for 15 minutes, brush on the remaining glaze, and continue baking 10 to 15 minutes more, until the internal temperature reaches 165°F and the bacon is crisp.
- Rest the chicken for 5 minutes, slice, and spoon any pan drippings over the top before serving.
Notes
If your chicken breasts are larger than 6 ounces, add a few extra minutes to the bake time and still rely on the thermometer rather than the clock. Thin bacon is key here; thick-cut will need a quick sear before wrapping or it won't get fully crisp in time.
