Bacon and Cheese Quiche Recipe

Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt (for crust)
  • 1/2 cup unsalted butter, cold and cubed
  • 3 to 4 tablespoons ice water
  • 8 slices thick-cut bacon
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 teaspoon salt (for custard)
  • 1/4 teaspoon black pepper
  • Pinch ground nutmeg
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Gruyère cheese

Method
 

  1. Whisk flour and first salt in a bowl. Cut in cold butter until pea-sized bits remain. Stir in ice water until dough forms. Shape into a disc, wrap, and chill 30 minutes.
  2. Preheat oven to 375°F (190°C). Roll dough to a 12-inch circle, fit into a 9-inch pie dish, crimp edges, and prick bottom. Line with parchment and weights; blind bake 20 minutes. Remove weights and parchment.
  3. Cook bacon in a skillet over medium heat until crisp. Drain on paper towels and crumble. Reserve 2 tablespoons for topping if desired.
  4. Whisk eggs, cream, milk, second salt, pepper, and nutmeg until smooth.
  5. Scatter bacon and cheeses in crust. Pour custard over top and sprinkle reserved bacon. Bake 30 to 35 minutes until center is just set. Cool 10 minutes, slice, and serve.

Notes

The pie dough needs to chill for at least 30 minutes before rolling; plan accordingly. You can also use a store-bought pie crust and blind bake according to package directions.
