- Cream the butter and sugar until light, then beat in the egg, vanilla, and almond extract. Preheat oven to 350°F (175°C) and line baking sheets.
- Whisk the flour, cornstarch, baking powder, and salt in a separate bowl. Mix the dry ingredients into the wet mixture on low speed just until combined.
- Divide the dough, roll each half ¼ inch thick between parchment, and chill for at least 45 minutes.
- Cut out shapes, place on baking sheets, and bake for 8 to 12 minutes until edges are lightly golden. Cool completely.
- Decorate with tinted icing and let it set before serving.
Notes
The dough requires at least 45 minutes of chilling, so plan that into your timeline. If you prefer a thicker cookie, roll the dough to ⅓ inch and add a minute or two to the bake time, watching for pale but set centers.
