- Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan. In a blender, combine cottage cheese, avocado, eggs, milk, and vanilla. Blend until smooth, about 1 minute.
- In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt. Pour the avocado mixture over the dry ingredients and fold gently until no dry streaks remain, about 20 strokes.
- Scrape batter into the prepared pan and smooth the top. Bake 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan 10 minutes, then transfer to a wire rack to cool completely.
- Slice the cooled bread with a serrated knife and serve plain or toasted.
Notes
The bread tastes even better the next day once the avocado flavor mellows. If your loaf pan is dark metal, the crust may brown faster; check at 40 minutes.
