Authentic Mexican Sopes Recipe

Ingredients
  

  • 2 cups masa harina
  • ½ tsp fine salt
  • 1 ½ cups warm water, plus more as needed
  • Vegetable oil for frying
  • 1 cup warm refried beans
  • 2 cups cooked, seasoned shredded chicken or beef
  • ½ cup salsa of your choice
  • ½ cup crumbled queso fresco or cotija
  • ¼ cup Mexican crema or sour cream
  • 1 cup finely shredded iceberg lettuce
  • Pickled red onions (optional)

Method
 

  1. Stir together masa harina and salt in a bowl. Add 1 ½ cups warm water, mix by hand until a soft dough forms, cover, and rest 15 minutes.
  2. Divide dough into 12 balls. Flatten each to a 3-inch disc, then pinch up a ¼-inch rim to form a shallow cup.
  3. Heat ½ inch of vegetable oil in a skillet to 350°F (175°C). Fry sopes in batches, about 3 minutes per side, until golden. Drain on paper towels.
  4. While hot, spread refried beans over each sope. Top with shredded meat, salsa, cheese, crema, lettuce, and pickled onions. Serve immediately.

Notes

If the dough feels dry while shaping, work in a little more warm water until it’s pliable. Sopes can be fried a few hours ahead and kept at room temperature; reheat them in a dry skillet over medium heat for a minute per side to recrisp before topping.
