Authentic Mexican Red Salsa Recipe

Ingredients
  

  • 4 Roma tomatoes, halved
  • 2 to 3 dried chiles de árbol, stemmed
  • 1/2 small white onion, quartered
  • 2 garlic cloves, unpeeled
  • 1/4 cup fresh cilantro leaves
  • 1/2 teaspoon salt
  • 1/4 cup water

Method
 

  1. Set an oven rack about 6 inches from the broiler and preheat the broiler. Arrange the tomatoes cut side up on a foil-lined sheet pan and scatter the chiles, onion, and garlic around them. Broil for 8 to 10 minutes, until the tomato skins are blackened in spots and the chiles have darkened.
  2. Let the vegetables cool briefly, then peel the garlic. Transfer everything to a blender with the cilantro, salt, and water. Blend for 30 seconds until almost smooth, scraping down the sides as needed.
  3. Pour the salsa into a bowl, top with extra cilantro and chopped onion, and serve. It’s delicious warm, at room temperature, or chilled.

Notes

A splash of white vinegar or a squeeze of lime added at the end gives the salsa a tangier edge that’s common in some regions of Mexico. The salsa will thicken as it cools; thin it with a little water if you’re making it ahead.
