Authentic Mexican Horchata Recipe

Ingredients
  

  • 1 cup long-grain white rice
  • 1 cinnamon stick
  • 4 cups warm water
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Ground cinnamon, for garnish

Method
 

  1. Soak rice and cinnamon stick in 2 cups of the warm water for at least 4 hours or overnight.
  2. Pour the soaked mixture and remaining 2 cups water into a blender. Blend on high 3–4 minutes until smooth and milky.
  3. Strain through a fine-mesh sieve into a pitcher, pressing solids with a spatula for about 2 minutes.
  4. Stir in milk, sugar, and vanilla until dissolved.
  5. Serve over ice with a sprinkle of ground cinnamon.

Notes

This recipe needs an overnight soak (at least 4 hours) to soften the rice, so plan ahead. If you’re short on time, you can soak the rice in very hot water for 2 hours, but the final drink won’t be quite as smooth.
