Authentic Mexican Flan Recipe

Ingredients
  

  • 3/4 cup (150g) granulated sugar
  • 5 large eggs
  • 1 can (14 oz / 397g) sweetened condensed milk
  • 1 can (12 oz / 354ml) evaporated milk
  • 2 tsp vanilla extract
  • Pinch of salt

Method
 

  1. Preheat oven to 350°F (175°C). Make the caramel by cooking sugar and water until deep amber, then pour into a 9-inch round pan.
  2. Blend eggs, sweetened condensed milk, evaporated milk, vanilla, and salt until smooth. Pour over the caramel.
  3. Place the pan in a water bath with hot water reaching halfway up the sides. Bake 50 to 60 minutes until set at the edges and jiggly in the center.
  4. Cool, then chill at least 4 hours. Run a knife around the edge, invert onto a plate, and serve with the caramel sauce.

Notes

Chilling time is not included in the total; plan for at least 4 hours of chilling before serving. The flan releases more easily when well-chilled.
