Authentic Mexican Chilaquiles Recipe

Ingredients
  

  • 12 corn tortillas, each cut into 6 wedges
  • 1 cup vegetable oil
  • 1½ cups salsa roja or verde
  • 2 tbsp finely diced white onion, plus extra for serving
  • 1 garlic clove, minced
  • ½ tsp kosher salt
  • 2 large eggs
  • 3 tbsp Mexican crema
  • ⅓ cup crumbled queso fresco
  • Small handful fresh cilantro leaves, roughly chopped

Method
 

  1. Heat oil in a large skillet over medium-high until shimmering, then fry tortilla wedges in batches for 3-4 minutes until deep golden and crisp. Drain on paper towels and salt lightly.
  2. In the same skillet with a tablespoon of oil, cook onion and garlic 1-2 minutes, then add salsa and simmer 5 minutes until thickened.
  3. Fold fried chips into the salsa and toss gently for 1 minute, just until hot and coated but still slightly crisp.
  4. In a separate pan, fry eggs sunny-side up 2-3 minutes until whites are set and yolks runny.
  5. Plate the chips, top with an egg, crema, queso fresco, extra onion, and cilantro. Serve right away.

Notes

Chilaquiles are at their best the moment they’re assembled, when the chips still have a little bite. If you want to prep ahead, fry the chips and simmer the salsa, then combine and top just before eating.
