Ingredients

  • 4 (6 oz) cod fillets, 1 to 1½ inches thick
  • 1 tbsp vegetable oil
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 1 tsp toasted sesame oil
  • ¼ tsp red pepper flakes
  • Sliced green onions and sesame seeds, for serving
  • Cooked jasmine rice, for serving

Method

  1. Pat the cod dry and season with salt. Sear in a hot oiled nonstick skillet for about 3 minutes per side, until golden and just cooked through. Transfer to a plate and keep warm.
  2. Lower heat, add garlic and ginger to the pan, and stir for 30 seconds. Pour in the soy sauce, honey, sesame oil, and red pepper flakes. Simmer for 2 minutes until the glaze thickens.
  3. Return the cod to the pan, spoon the glaze over the fillets, and warm through for 1 minute.
  4. Serve the cod over jasmine rice, spoon extra glaze on top, and garnish with green onions and sesame seeds. Eat right away.

Notes

If your cod fillets are thinner than 1 inch, trim the sear time by a minute per side so they don’t dry out. The glaze thickens quickly after you return the fish, so watch it closely.
