Ingredients

  • 3 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • ¼ tsp red pepper flakes
  • 4 salmon fillets (about 6 oz each)
  • 2 scallions, sliced
  • 1 tsp sesame seeds

Method

  1. Whisk the soy sauce, sesame oil, rice vinegar, brown sugar, garlic, ginger, and red pepper flakes in a small bowl.
  2. Place the salmon in a shallow dish, pour the marinade over, turn to coat, and let sit at room temperature for 15 minutes or refrigerate up to 1 hour.
  3. Preheat broiler to high. Line a baking sheet with foil, oil it lightly, place fillets skin-side down, and broil for 4 to 5 minutes. Baste with marinade, then broil another 4 to 5 minutes until caramelized.
  4. Plate the salmon, spoon any juices over, and scatter scallions and sesame seeds.

Notes

If you marinate the salmon longer than 1 hour, reduce the vinegar by half or skip it to keep the texture firm. The fish cooks fast, so have your sides ready before you slide it under the broiler.
